I know it's been quite awhile since my last post. Let me tell you... ya girl has been soooo busy! More on that later.
This is a special post about a special dinner.
I am a BzzAgent and I love it. I recently received a few free coupons from Kroger to try some of their products. The coupons were for a pork tenderloin, mashed potatoes, cake mix and frosting. My family always enjoys cooking together and this dinner was no exception. We have been so busy lately that a dinner where we all had time to share was a treat. Our menu: Herb- crusted tenderloin, wilted spinach salad, mashed potatoes, and white cake w/ frosting for dessert.
I made the wilted spinach salad and tenderloin with this recipe that I've been using for years but modified it using 3 T. of organic raw local honey:
Herb Crusted Pork Tenderloin
- Prep Time: 10 mins
- Total Time: 35 mins
- Servings: 6
Ingredients
- 1 1/2 cups breadcrumbs
- 1 teaspoon dried basil
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 1/2 teaspoon dried thyme
- 1 tablespoon olive oil
- 2 (1 lb) pork tenderloin
Directions
- Stir together first five ingredients.
- Brush tenderloin with olive oil and roll in the crumb mixture until completely covered.
- Roast at 425° for about 25 minutes or until meat thermometer reads 160.
- Drizzle honey over roast.
- Rest 10 minutes before slicing.
My sons love to bake and they were in charge of the cake. I purchased a white cake mix with white frosting. We had lots of sprinkles on hand! They went to town! They used all of my sprinkles but the cake came out so delicious and moist. My husband (who doesn't like to cook as much as he love to watch) made the mashed potatoes in the microwave. I'm not much a fan of any mashed potatoes if their not fresh but these would do. I wanted to try them. They were as expected to me: not very creamy but they'd be good to use for a super quick meal.
All in all, the meal was a success and we enjoyed our time together.
We love the Kroger brand because we've come to rely on it for it's value, quality, and name.
